Loaded Cheesy Potato Gems

Loaded Cheesy Potato Gems

Ingredients

  • 1 bag of potato gems
  • 5 – 6 rashes of cooked good quality bacon, diced
  • 1 cup shredded tasty or cheddar cheese
  • Sour cream and fresh chives (chopped) to garnish

Method:

  1. On a lined baking tray oven bake the bag of potato gems as per the cooking instructions on the packaging,
  2. Add butter to a pan and cook bacon rashes until crispy,
  3. Dice cooked bacon and set aside.
  4. Once potato gems are golden brown and crispy, remove them from the oven.
  5. Add the hot potato gems to a bowl and top with tasty or cheddar cheese,
  6. Place in the oven on low until cheese melts,
  7. Top cheese with diced bacon, dollops of sour cream and chopped fresh chives to serve.
